Vegetarian Pasta with Sun Dried Tomatoes
This has to be the ultimate vegetarian pasta recipe. There’s so much goodness in this dish and it’s also really filling and extremely tasty. Some might think that the peppers could make it slightly bitter but together with the pine nuts and basil, it screams freshness and will be enjoyed by herbivores and carnivores alike.
INGREDIENTS
1/2 lb Scallops
1/4 cup bread crumbs
3 tbsp melted butter
1 tsp curry powder
1 tsp salt
2 tsp lemon juice
4 thin lemon slices
DIRECTIONS
Melt butter, add curry powders, salt and lemon juice.
Let Scallops marinate.
Drain scallops, roll in bread crumbs, place in buttered shell.
Sprinkle a light pinch of curry powder over scallops.
Cook at 450° F for 15 minutes.
